Cooking wild Asparagus…

NICE EASY MEAL LAST NIGHT…

First pick the Asparagus young shoots growing all around in the garden.

Then cut the soft stems into small bits (around half a centimeter lengths). I boiled some pasta beforehand. Cut up some celery (had that in the garden too)…   Fried the pasta first in a wok, stirring continually (well almost), Then added the Asparagus, Celery, salt and garlic (to taste) and carried on frying for a while even adding some milk.
Food in SicilyThen added rikotta and beaten eggs. Kept stirring till it browned slightly – and ready to serve. Delicious Pasta omelette….

For our friends in Malta.

This Asparagus grows wild here. The locals told me that you can’t grow it even if you tried. Being me (hard headed) I went ahead and dug out some plants with roots and replanted and now have it in profuse and healthy supply. It also requires no care or maintenance and hardly any water – ideal for Malta’s dry hot climate.

      Yes, I built the site and blog myself. I am no professional… just wanted to be able to post and modify as and when required without major costs and delays. Thanks for the compliments.

    In Malta Asparagus is being cultivated by a young farmer. Josef Farrugia harvested his first asparagus this year. He wanted to diversify his activity and it was a success.
